Raw Asparagus Salad

Raw Asparagus Salad

This has to be my favorite preparation of asparagus, raw or cooked.  Fresh and light, it is great paired with anything from the grill or simply by itself.


What you need:

1 bunch of asaparagus
1/4 red onion
1/4 cup olive oil
1 tbsp red wine vinegar
2 tsp fresh cracked pepper
1 tsp sea salt
4-5 fresh basil leaves
1/2 cup fresh grated parmesan

First:

Wash asparagus and remove ends where they naturally break.  Slice very thin and then finely chop. Set aside in medium bowl. Chop onion finely and place in bowl with asparagus.

Next:

Pour olive oil and red wine vinegar over asparagus and onion and stir until coated. Add fresh ground pepper and sea salt.

Then:

Chop the basil and add to bowl.

Finally:

Grate the parmesan and set aside until ready to serve.  Just before serving, add your parmesan and mix.  Enjoy!

I will be posting these recipes as I make them. Each week the recipes will vary depending on the ingredients I get with Bountiful Basket Food Coop. My goal is to use all fresh produce and minimize the amount of ingredients I have to purchase elsewhere.  I would like to post pictures with all recipes so you will have to be patient! ;)

It is a gathering together of recipes from the hearts and homes of people that have chosen to make healthy decisions for their families.  But, don't let that scare you!! We are passionate about good food. It not only needs to be healthy, but it has to taste amazing! We are setting out to prove that healthy food can have even more dynamic flavors and depth than food that is processed, full of unhealthy fats, and is flat out bad for you.  We hope you enjoy the variety of recipes that are "from-scratch." You will not find processed short cuts here. You will find great food and some great tips for the kitchen and the rest of your home. Enjoy!
